2-Minute Juicy Watermelon Salad

The long holiday weekend is juuuuust around the corner. That means sun, fun, drinks, fireworks...and of course, as much BBQ and apple pie as the ol' body can handle. But you've got to have something to balance out all those burgers and brews, right? (Don't answer that).

Enter this delightfully refreshing watermelon salad. It’s insanely easy to whip up because it only has 5 ingredients, and it’s full of Vitamin A, C and B6; lycopene; and antioxidants. Not to mention it’s super hydrating, since watermelons are mostly water. Your health and your host will thank you, and you won't have to feel guilty about indulging in another glass of white wine. Hey, it's the American way.

  • 2 cups watermelon, cubed

  • 1 tbs feta cheese, crumbled

  • 1 tbs mint

  • 1/4 cup olive oil

  • 1/4 cup red wine vinegar



  • Throw watermelon in a bowl.

  • Toss with oil and vinegar.

  • Top with feta and mint, and voilà!
