Along with Lisa Frank and mini backpacks, peanut butter and jelly sandwiches were a big part of my childhood. And although my days of Skippy and Smuckers are over, I still crave a good ol’ fashioned PB&J once in awhile.
Enter these no-bake, good-for-you protein balls that are easy to make and even easier to eat. Full of protein, fiber and healthy fats, they’re perfect for a quick snack or dessert and are a way cheaper alternative to a Larabar. Just toss all the ingredients into a blender, form into balls and go to town. Capri Sun optional.
1 cup roasted, unsalted peanuts
1 cup seedless raisins
½ cup oats
1 scoop vanilla protein powder
1 tbs peanut butter
1 tbs strawberry fruit spread
1 tsp vanilla extract
Blend all ingredients in a food processor or Vitamix. You may need to wipe down the sides of your blender a few times to make sure everything is mixed well.
- Form into balls and store in refrigerator. Makes about 12.
